Grapes: Syrah
Vineyard: "Degli Ulivi" vineyard, 500 m above sea level, northwest exposure. Calcareous/marly drained soils. Guyot training system.
Yield per hectare: 50 quintals
Harvest: By hand in boxes. Period: early October
Vinification: In vitrified cement vats for 20-22 days with daily pumping over. The wine is then transferred to tanks, also made of vitrified cement, where malolactic fermentation takes place.
Refinement: 12 months in third-passage French oak barriques. Refinement in the bottle lasts at least 6 months.
Alcohol: 13.5 % vol.
